Low Carb Pancakes: Breakfast of Champions!

I’ve always heard that breakfast is the most important meal of the day and I wholeheartedly agree. I can’t stand starting off my day with an empty and growling belly. I will feel exhausted and I can’t focus when I don’t eat and let’s not even talk about my mood because I take “hangry” to a whole new level. I’ve always been that way. As a kid, my mom always stressed the importance of starting the day off right with a hearty breakfast. I was lucky enough to have a stay at home mom for the vast majority of my school aged life and she made us breakfast every single morning and back then I would grumble and moan and groan about having to get up 15 minutes earlier than I normally would have just because Mom wanted us to eat. Then I would go to class and hear some of my friends stomachs growling while we were trying to focus and learn, that’s when I realized that I might be losing a precious few extra minutes of sleep but overall my day was much better for it!

Now, Brandyn and I set our alarms early every morning so we can get up and make a hot breakfast and drink a cup of coffee together before we have to get ready and start another crazy day at the Pharm. We work together in a pharmacy and I won’t go into detail but pharmacy life is a rollercoaster ride all day everyday. It’s mentally and physically exhausting so starting our day off peacefully is necessary for our sanity and overall wellbeing.

All that being said, I ADORE breakfast food. Heck, I even love breakfast for dinner! We usually do bacon and eggs, sausage and eggs, ham and eggs… you get the idea. But I love pancakes and I’ve been on a mission to find a way to have pancakes every now and then without cheating on our low carb lifestyle and boy oh boy have I found a winner! This recipe is a must try for pancake lovers who are on the low carb train!

Here’s the line-up: Super fine almond flour, stevia, full fat cream cheese, eggs, baking powder (not pictured), vanilla extract, and coconut oil. Sugar free syrup to top!


Measure out almond flour and cream cheese into a large mixing bowl.
Add eggs and baking powder.
Mix until all chunks of cream cheese are broken up and there are not other large lumps of almond flour.
It makes for a very smooth batter that looks and smells just like regular pancake batter.
Preheat a griddle or a pan and melt coconut oil for a great crisp on your pancakes!
Cook them like normal pancakes, flip them when you start to see a couple bubbles come to the surface. This mixture made about 7 pancakes. I used a 1/4 cup measuring cup to try to keep them all about the same size.


Oh. My. Dear. Sweet. Heavens. How good do these look?! Of course a nice pat of butter to melt gently over the top makes everything even better!
Drizzle with sugar free syrup (remember to check your labels, some have hidden junk in them) and enjoy!
Fluffy and DELICIOUS! These are filling too! We each had 3 and 1/2 and were full!


  • 2/3 cup almond flour
  • 2 ounces cream cheese
  • 2 eggs
  • 1 teaspoonful stevia
  • 1 teaspoonful vanilla extract
  • 1 teaspoonful baking powder
  • coconut oil (for cooking)
  • sugar free syrup and butter (for topping)


  • Combine all ingredients in a large mixing bowl and mix with a hand mixer until smooth and no lumps.
  • Preheat a pan or a griddle and let a spoonful of coconut oil melt and get hot.
  • Pour batter (I used a 1/4 cup measuring cup) and smooth batter out into a thin round,
  • Cook until slow bubbles start to appear and then flip and cook for another minute.
  • Stack, top, and serve!
  • ENJOY!
