Keto Chocolate Mug Cake: FAIL

I knew it would happen. It was inevitable. But why did it have to be on this recipe!? I had such high hopes! My little chocolate loving heart was singing with joy from the moment I found this recipe to the moment I put the first bite in my mouth. Joy turned to disgust. Sadness prevailed in the McClary kitchen. Clouds covered the sun and darkness was all that I knew.

Hey… did I mention that I’m dramatic? No? Well, I am. Consider yourselves warned from now on. Ok, but seriously it wasn’t the end of the world but this adorable little mug cupcake was BAD! How could something so cute be so awful?! I shouldn’t have trusted Pinterest quite so wholeheartedly and only after this experience did I bother to read other Pinteresters’ reviews. Let me tell ya, they didn’t hold back! I still really want to make this work though so I am going to be behind the scenes working on this and tweaking the recipe some to see if I can turn a flop into a success story for y’all!

As usual I’ll include all the pictures I took and the recipe that I used. If anyone has tried this please let me know! If you have any ideas on how we could improve this sad little dessert, let us know!

Here’s the line-up: Hershey’s 100% Cacao powder, heavy whipping cream, cage free egg, stevia, baking powder, vanilla extract, salt, and butter flavor cooking spray.

Beat one egg in a small bowl until fluffy.

In another small bowl combine all dry ingredients (except baking powder)

Add egg to dry ingredients and combine well, then add baking powder and combine.

POUR PORN! Pour the batter into a greased coffee mug. Side note: my mother in law gave me this mug and it’s PERFECTION! Thanks, Mel!

Microwave for about 55-75 seconds. It took about 65 seconds for ours. Immediately turn mug over and pop the cake on a plate. Allow to cool for 1-2 minutes.

At this point I was bouncing up and down with joy and anticipation. I topped it with a swirl of whipped cream for some extra pizazz.

And I was salivating as I took this picture, but the devastation occurred approximately 1.34 seconds after I took this picture.

This. Cake. Was. A. Bitter. Hot. Mess.

I knew it wasn’t going to be like milk chocolatey level sweet but holy cow. I was NOT prepared for the nuclear assault on my taste buds. I’m not sure how this recipe escaped the test kitchens but it needs to be banished from the face of this earth.
