How is it only Thursday?! Seriously… the Monday-est Thursday EVER. I feel extremely drained both mentally and physically! A whirlwind trip to the mountains of western North Carolina for my sisters wedding shower and then jumping right back into a workweek has been rough. The only thing getting me through is the promise of Friday looming ahead of me and a very relaxing weekend with the hubby to look forward to!
That being said; I really didn’t feel like spending a lot of time in the kitchen cooking dinner tonight. We have been making a huge effort to cook 95% of our meals at home these days. It is just so much easier to stick to our low carb diet when we make the food ourselves (not to mention a lot cheaper) and can control what goes into it. Sometimes a shortcut is much appreciated though! On our last trip to Sam’s Club we picked up a box of SeaPak Shrimp Scampi in the freezer section for a little less than $15! We don’t typically do ready-made entrees but sometimes they really are a lifesaver. We have both lost a little over 14 pounds so far on the low carb diet and I don’t want to get derailed by a impromptu dinner out!
I was able to throw the shrimp scampi in the oven and whipped up some steamed brocolli in the microwave. Dinner was ready within 20 minutes! It was low carb to boot! My whole meal was roughly 10 net carbs! I highly recommend trying this shrimp scampi dish! It was so delicious and super quick and easy!
I know posting a blog about a brand new recipe or some glorious homemade masterpiece is preferable but I’m no super hero and I’m going to keep it 100% real with y’all! Sometimes the best I can manage is throwing something in the oven and eating it as I sit Indian style on my couch watching YouTube videos of people making awesome recipes.
