Mississippi Pot Roast: Crockpot Cookin’

I love cooking. The vast majority of my memories growing up revolve around the kitchen. It is my family’s gathering place. It’s where we have some of our best conversations and we come up with some of our best ideas as we work together to create a delicious meal for our loved ones. But sometimes I just don’t have it in me to stand in the kitchen and prepare a meal after a long day on my feet. Life tends to get in the way and sometimes 24 hours in a day just doesn’t seem like enough! That’s when I rely on my arsenal of crockpot meals!

Everyone should have at least five tried and true favorite crockpot meals. Now that we are living the low carb lifestyle; I’ve had to ditch a couple of my normal go to recipes and I’m on a mission to find some replacements but one meal that works for our low carb and has been a longtime favorite is: Mississippi Pot Roast. Now, I have no clue where this name came from but frankly with as good as this stuff tastes I don’t even care what they want to call it! It’s only FIVE ingredients and you can just dump it in the crockpot and head off to work and not even think about it again! I made it today and we paired it with a fresh salad and it was simply perfection, so I thought I would share it with you! If you aren’t on a low carb regime it’s also amazing over rice!

You’ll thank me for this one, I promise!

You’ll need a boneless beef chuck roast that’s about 3 pounds, we got a two pack at Sam’s Club and we froze the other!

Here’s the line up! Boneless beef chuck roast, ranch packet, au jus gravy packet, one stick of unsalted butter, and whole pepperoncini peppers.

Plop the whole stick of butter on top of the roast and then throw in some pepperoncini. We LOVE the flavor the peppers impart so we are liberal with them.

Next you sprinkle the ranch packet and the au jus gravy packet over the top. DO NOT ADD ANY WATER.

Pop the lid on and set the crockpot to low if you’re going to be gone for a full workday like we are! When you get home just shred it with two forks and enjoy!

INGREDIENTS:

  • Boneless beef chuck roast (about 3 pounds)
  • Ranch dressing mix packet
  • Au Jus Gravy packet
  • One stick unsalted butter (NOT margarine)
  • 5-10 whole pepperoncini peppers

INSTRUCTIONS:

  • Put chuck roast in the crockpot
  • Put butter, pepperoncini peppers, and contents of ranch and au just packets on top
  • Put lid on crockpot and cook on low for 8 hours, and voila! You’re done!

 

I got this recipe from Table for Two Blog and I adapted it a little to suit our tastes!

NOTE: This dish can be a bit on the saltier side so make sure you don’t pair it with a salty side dish! We paired ours with a fresh side salad but it would be great with a veggie on the side as well. In the past we have paired it with rice, mashed potatoes or even on a hoagie roll for an awesome sandwich would be a great idea!
