Baked Zucchini Pizza Bites!

I love carbs, but carbs hate me. I have PCOS (poly cystic ovarian syndrome) so my body literally craves carbs ALL. THE. TIME. If someone told me I could only eat bread, pasta, and potato products for the rest of my life; I would think I had hit the lottery! I’ve tried and failed calorie counting diet after calorie counting diet and about three weeks ago I finally decided that enough was enough. I took the low-carb plunge!

And honestly… It’s been GREAT.

It hasn’t been easy by any stretch of the imagination but it’s actually been sustainable. I haven’t been contemplating gnawing off my own arm to quiet those pesky hunger pains that normally plague me when I’m trying to diet. That’s always been my major issue up until now. I love to eat and I was a junk food junkie from way back! So my body was used to eating those instant gratification carb loaded snacks and when I would go on these calorie restrictive diets I would basically starve. No matter how creative I got, 1200 calories just wasn’t a lot of food, and I couldn’t get/stay full.

I haven’t really been meticulously counting how many grams of carbs I have been consuming in a day but I have been mindful and tried to stay under 20-30 grams of carbs per day. I cut out the major off limits foods like: bread, pasta, rice, potatoes, sweets/candy, and just anything that had added sugar in general. Tomorrow makes exactly three weeks of low carb living and I’m proud to share that I have lost 12 pounds! Y’all… TWELVE POUNDS!

I attribute cooking 98% of our meals at home, meal planning, and packing our lunches to my success. Well, technically, OUR success because Brandyn is low carbing with me and he has lost 14 pounds! Having a support system has been invaluable and we really push each other and keep each other accountable.

I used to think that a low carb diet meant eating meat, cheese,and eggs 24/7. And, although we do eat a fair amount of those things, we have learned dupes for a LOT of our favorite foods and it’s been so much fun trying new recipes! So, I figured I would browse Pinterest and start trying out some recipes that looked delicious and give y’all some reviews! We have all seen the Pinterest failures (I’m sure I’m going to have some of those myself and YES I will share them) but when I’m searching for a meal I want to KNOW it’s going to turn out great because I HATE wasting my time and money on a big fat flop!

So, without further ado… the recipe I tried today was a SUCCESS! I found the recipe on:

Here’s the line-up: cooking spray, zucchini (I ended up only using two), pepperoni, pizza blend cheese, parmesan cheese, and pizza sauce. Easy peasy!

Slice zucchini into thin rounds.

Preheat oven to 375 F, line baking sheet with foil, and spray with cooking spray.

Line zucchini rounds onto baking sheet in a single layer with a little space left between each one.

Top each round with a thin layer of pizza sauce.

Next comes the CHEESE! I love this pizza blend!

Now on to my favorite! PEPPERONI! Place a slice of pepperoni on each zucchini round and don’t forget to treat yourself and snack on a couple pepperoni!

Next comes the light sprinkling of parmesan cheese!

Once they look like this and your mouth is watering uncontrollable; pop them in the preheated oven for 10-14 minutes!

DEVOUR!

Ingredients:

  1. 2 zucchini, cut into 1/4″ rounds
  2. 1 cup pizza sauce (I found that the pizza sauce was lower in carbs than most of the spaghetti sauces)
  3. 1 cup shredded pizza blend cheese (or mozzarella)
  4. pepperoni
  5. 1/4 cup shredded parmesan

Instructions:

  1. Preheat oven to 375 degrees F. Link baking sheet with tin foil, and spray with cooking spray.
  2. Line zucchini rounds in a single layer on the baking sheet. Top each round with pizza sauce, pizza blend cheese, one pepperoni, and parmesan.
  3. Bake for 10-14 minutes until cheese is melted and heated through.

  1. Congrats on your 12lbs and starting a blog!! I’ve been slowly moving to low/no carbs too! I will definitely have to try this recipe. It has all my favs so I know it will be good. Have you tried zoodles? Just had some tonight! Soo good…didn’t miss the actual pasta.

    • Thank you so much! Some days are definitely harder than others but finding dupes that are low carb has saved my sanity! I’ve heard so much about zoodles but I haven’t tried them yet! I’ll definitely have to very soon! Thanks for the suggestion and good luck with your low/no carb journey as well! We are in this together!
